Buttermilk Fried Chicken

A big platter of this crispy, tender, golden brown chicken would be a hit at almost any potluck or picnic. Immersing the chicken pieces in the buttermilk brine for several hours gives the chicken loads of flavor and helps keep the meat moist as it fries. The acid in the buttermilk also helps to tenderize the chicken.

Wow - This was perfect

I used this recipe for my first attempt at making fried chicken. I didn't have the time to marinate the chicken in the buttermilk for the full 4 hours (only for 1 to 1.5 hours) but the chicken still turned out delicious! Crispy and flavorful on the outside, moist and flavorful on the inside. I followed the instructions to the T aside from the following: a) I used 4 lbs of whole wings and drumstick pieces; b) I only put the chicken in the buttermilk mixture for about 1.5 hours; c)I sprinkled both sides of each chicken piece very lightly with fine sea salt immediately after taking it out of the oil and putting it on the baking sheet. This reheats well also. Thanks WS!! This is my go-to recipe from now on. I may try some variations to the flour mixture but really there's no need, this was just perfect!
