Braised Lamb Shoulder Chops with Tomatoes and Rosemary

Lamb shoulder chops are much less expensive than loin or rib chops, and because they have many more bones, they are far more flavorful as well. You would not want to braise the pricier, smaller loin or rib chops-which are best served rosy and pink-but shoulder chops develop an irresistible richness after simmering in a red-wine broth.

Couldn't find my old recipe for a tomatoey lamb recipe & found this one. Sliced the beefsteak tomato I had in the refrigerator to use in addition to the canned tomatoes and luckily had a bit of red wine I wanted to use up. Used a sliced onion since I didn't have shallots and nestled some peeled potatoes into the pan before putting it into the oven to cook.
It took longer to cook that way, but that was my plan - WOW! It was worth the wait. Everything was cooked beautifully, tender lamb, soft enough to mash potatoes, and the onion and tomatoes cooked down into a heavenly saucey consistency.

I made this recipe in the pressure cooker, following the directions to start on the stovetop and then put everything in the electric pressure cooker for 12 minutes. My husband said this dish was as good as a dish we ate recently in a 5 star Yelp-rated restaurant. I would definitely recommend.

Very delicious. I didn't have canned tomatoes so used some dried tomatoes and extra water. Everyone liked it and would be worthy of repeating. I also didn't have olives and I'm sure it would have been even more delicious with them.
