Many varieties of berries are available from late spring through early fall. While this recipe calls for blackberries, you can use boysenberries, raspberries, olallieberries or other berries instead.

Indeed, these are delicious treats, although by no means low calorie! I made these with fresh picked blackberries, which were a kinda sour. Even with the sour berries, I thought this recipe was a bit too sweet. However, I think most people would disagree. My boyfriend loved them! Next time I'll try with half the sugar in the curd mixture. They would also be great with nuts on top, either more almonds or pecans.

Cons: Unhealthy, Lengthy

I've made lemon bars for years...and lime, orange...But these are my new favorite! The crust is so delicious and the blackberry curd is amazing...I am making them now for my friend's coffee shop and she is selling them like crazy! Be sure to measure your juice, because my blackberries yielded much more then 3/4 cup....
