Black Pepper Crepes with Goat Cheese and Tomatoes

Refrigerating the batter helps produce exceptionally tender crepes because, as the batter chills, the flour expands and absorbs the liquid. You can cook the crepes in advance, then fill and broil them just before serving.

Taking advantage of the freshest tomatoes, this recipe showcases simple ingredients at their best. The cracked pepper crepes are excellent and while plain could be substituted, the pepper adds wonderful dimension. Embedded in the crepe, the pepper flavor really pops!
Pros: Quick, Good Value, Easy, Healthy, Appearance, Adaptable, Impressive, Will Make Again
Cons: need to plan ahead
