Butternut squash is rich in beta-carotene and other protective phytochemicals. Both squash and black beans are good sources of dietary fiber. The nutty taste of the squash is complemented by the caraway seeds and beer used to season this hearty vegetarian stew.

Great vegetarian stew

This is a good vegetarian stew. It could use a little more spice and flavor though. While it's filling and has a good amount of protein, I still think it would be better with some kind of meat. Ground italian sausage? Chorizo?
I served it with cornbread muffins, which were a nice compliment, but at the end of the meal I still felt like something was missing.
Next time I might try topping it with avocado slices and crispy tortilla strips!

Black Beans with a Twist

This recipe is great! The peppers and squash make it different, and the beer and caraway make black beans into something altogether new. Easy and quick. Tastes good the night you make it, even better the next night.
