To make a white bean soup, substitute canned cannellini or Great Northern beans for the black beans, and omit the sherry and sour cream.

Needs a little more work
February 26, 2011
If you puree enough of the soup you will get the consistency shown in the picture. Here is my recipe: 16 oz black beans soaked overnight 1 large yellow onion 4 cloves garlic 1 tsp cumin 2 teaspoons chile powder (medium chimayo) ½ tsp worcester celery 1 stalk chopped 2 tbs chopped cilantro 2 carrots chopped ½ teaspoon chicken bouillon granules 1 2-cup Knorr Swiss beef bouillon cube (or 2 tsp granules) 10 slices thick bacon cut up
Procedure Cook bacon in microwave Saute onion and garlic in bacon fat Add remaining ingredients and crumble in bacon Add water to cover (?6 cups and add more later if necessary) Cook 2-3 hr or until beans are tender Remove a ladle at a time and puree, returning to the pot until your desired consistency is obtained.

The Soup looks NOTHING like what is pictured
February 4, 2011
Though I followed this recipe to the letter, I ended up with a thin liquidy soup that looks nothing like what is pictured. I can't even suggest what to do to fix it. I think that 6 cups of liquid might be a misprint.
