Sweet onions are markedly more mellow and sugary than typical cooking onions. Here, Georgia's Vidalia onions are roasted to intensify their natural sugars and then combined with sherry, which contributes a distinctive nuttiness to the sauce.

I looked at this recipe and thought it would be okay. Much to my surprise, it was completely DELICIOUS! It was so darn easy to make!
I complemented the recipe with some leftover sausage stuffing and some fresh steamed broccoli. But I have to say, I served this meal with slices of ripe pear and it went so well with the sauce that we were blown away.
I would highly recommend this recipe. All the ingredients are probably in your pantry/refrigerator. I used chicken boneless, skinless breasts and the recipe still tasted divine.
Pros: Yield, Good Value, Easy, Appearance, Adaptable, Impressive, Will Make Again

Very Tasty

I followed this recipe exactly. Served it with white cheddar grits and sauteed green beans. Very tasty. I did cut the chicken breasts in half because they were closer to 1 lb. each. The onion sauce went very well with the grits and was much darker and richer than pictured.
