Baked Chicken with Vidalia Onion Sauce

Sweet onions are markedly more mellow and sugary than typical cooking onions. Here, Georgia's Vidalia onions are roasted to intensify their natural sugars and then combined with sherry, which contributes a distinctive nuttiness to the sauce.

Delicious and Easy

I began this recipe after 6pm on a weeknight. My family was at the table eating before 7:30. I used skinless chicken breast, vermouth instead of sherry, and I cooked my vidalia onions for 15-20 minutes instead of 5. It gave the sauce a more roasted onion flavor. I used my vitamix blender instead of food processor.! My entire family was impressed with this dish. I paired it with roasted brussell sprouts and quinoa. Excellent!

Very tasty and easy to make. I had this whipped out in a half hour and was quite content with the outcome! I will def make this again.
