Bacon-and-Egg Breakfast Tarts
When the author was testing this recipe, she had the idea to crack an egg on top of each tart and then bake them together. The results were a bit of a disaster, to say the least. In the end, she fried the eggs separately and placed them on top of the baked tarts, which is easy and very pretty, too. Make these for a special brunch, especially if you want to impress your friends or in-laws

Incredible and impressive

Last week I had made a quiche for my family and had some dough left over, so I decided to try these for my husband's birthday breakfast. We live in Guatemala, so certain ingredients like creme fraiche don't exist here. Also, I didn't have sour cream nor chives, so I did improvise a little.
Instead of creme fraiche, I used cream cheese mixed with a tiny bit of cream. I only had mozzarella and parmesan cheeses already shredded, so I used those instead. I also diced a little bit of white onion and mixed that in with the cream, cream cheese, parmesan, and mozzarella. It was fantastic!
They were beautiful and delicious!

Easy and delicious

What I love about this recipe is how easy it is, but it looks and tastes like you slaved over it. I'm not a bacon fan so I added some cut up prosciutto after the tarts were done and then put the egg on top. My guests adored the dish, and so did I. Very hearty, easy and delicious. The only item to remember is to give yourself the time to let the phyllo dough thaw.
