Apples and Walnuts with Stilton Cheese

This salad takes advantage of two classic pairings: walnuts with Stilton cheese and walnuts with apples. Pears also go well with walnuts, so if the market has stocked beautiful pears-Bosc, red Bartlett, Anjou-you can use them in place of the apples. Other blue-veined cheeses, such as Maytag, bleu d'Auvergne or Danish blue, can be substituted for the Stilton.

This is a great salad, any time of year, but it seems especially wonderful in summer - could be a picnic pack along too (if you can keep it cool)!
I love dried currants and think they are more interesting than raisins. A little less sweet as well.

A delicious updated waldorf salad!

Served this wonderful salad with the ale braised beef short ribs (recipe also available on WS website), and enjoyed a most delcious meal. Everyone loved the combination of flavors: sweet of the apple, crunch of the celery, smokiness of the walnuts and savory of the Stilton.
