Delicious but watch out for the caramel sauce

The recipe for the apple gallette is right on the mark. The spices used on the apples are incredible and varied and the dough is fool-proof and soft. Wonderful.
This was my first time making caramel and I went through it twice using the 1 cup sugar and the 3 tbs water and it took forever! I gave up and tried again with the same recipe and had the same result! Finally I asked some women what they did and they said that the 3 tbs water was my issue. They recommended 1 or 2 tsp at the most. I tried that and it worked. Beware!
When the sauce finally came together it was all very delicious with a scoop of vanilla ice cream. The sauce is very rummy!
