Beyond excellent

I'm not a vegetarian, but have plenty of friends and significant others who are.
The recipes are all fantastic, simply explained, and decidedly delicious.
There are so many times I've cooked something for a vegetarian crowd and thought, this is good, but it would be so much better with [insert meat here]. I've not once had this thought when cooking from this book.
Pros: delicious
Cons: maybe not the healthiest collection of recipes

Best vegetarian cookbook ever.

As the only vegetarian in a family of omnivores, I am always looking for creative vegetarian recipes. This one has wonderful recipes and pictures. There are quite a few that I use any time I have to make something for a potluck, and the stuffed tomatoes were a huge hit at a bridal shower. I recommend this to everyone I meet who is considering vegetarianism. OH! The best part is it is written by someone who isn't vegetarian at all.
