Pecorino Cheese Collection
Pecorino in three inventive incarnations, all from the same Tuscan cheesemaker. One is wrapped in walnut leaves, another is floral and fruity thanks to the addition of figs, and a third is laced with honey. All together, they make a remarkable base for a wine-and-cheese party. Hand picked for us by the Italian cheese experts at Fresca Italia, our trio includes: Cacio e Fichi: A classic Pecorino (nutty, crumbly, buttery) with a seasonal twist. Its curd includes a bit of freeze-dried fig juice, lending the finished cheese a sweet, fruity, floral aroma and a pronounced taste of figs. Fior di Noci: This Pecorino is wrapped in walnut leaves and aged for at least 45 days; it has a sweet, slightly musty bouquet, a semi-firm texture and a nutty, almost briny flavor. Pecorino dell'Orso: Features a touch of honey and a beeswax rind. It is a light, fruity cheese with a taste that is (surprisingly) not too sweet.
