Mauviel M250 Copper Paella Pan

The Mauviel MPro pans feature heavy-gauge 2.5mm-thick copper and are designed to deliver the highest level of precision and performance. With loop handles, this low, broad pan offers the heat responsiveness integral to sauteing meats and vegetables for paella, prior to adding the rice. 16" diam., 2 1/4" high. Heavy-gauge 2.5mm copper offers unmatched heat conductivity and temperature control. Stainless-steel interior is nonreactive and easy to clean. This pan's beautiful copper construction makes it perfect to serve straight from the pan, which is traditional with paella. Riveted cast-iron loop handles. Made in France.

Best pan money can buy

I purchased this pan to make paella. And it's fantastic for that. But the surprise is that I use this pan all the time! So much so that I bought two. I use it to make spaghetti sauce. The size of the pan allows me to sautee onions and garlic very quickly and then to reduce the fresh tomatoes to a sauce. I also use it for cooking meat of all types. It's the sheer real estate of the pan and the even heat distribution from the copper that make it a must-have pan.
Pros: Durable, Easy to Use, Quality, Easy to Clean, Easy to Store, Size, Versatile, Shape, Design, can cook anything in it.

Fantastic Pan

We are great paella lovers in our house, and were excited to try this pan, which is a perfect size for 5 to 6 servings. The heat conductivity is terrific, and we were able to achieve a wonderful caramelized layer of rice on the bottom of the pan, which was eagerly (and greedily) scraped up by the enthusiastic diners. Clean up was very easy with Barkeeper's friend for the interior and the manufacturer's copper cleaner for the exterior.
