Fantastic Pan

We are great paella lovers in our house, and were excited to try this pan, which is a perfect size for 5 to 6 servings. The heat conductivity is terrific, and we were able to achieve a wonderful caramelized layer of rice on the bottom of the pan, which was eagerly (and greedily) scraped up by the enthusiastic diners. Clean up was very easy with Barkeeper's friend for the interior and the manufacturer's copper cleaner for the exterior.

Cons: Difficult to Store

Felt a little flimsy.

I was excited to get this pan, but was disappointed when it showed up. It measured 2mm, not the 2.5 mm it was supposed to be. There were huge gaps between the handles and the sides of the pan, I suppose the handles were not ground to match the sides properly. The whole thing just felt flimsy compared to my other 2.5mm Mauviel Cuprinox and Matfer Bourgeat pans, which is not good for a pan of this large diameter. I returned it.

It's not just a paella pan!

I bought this pan because I saw Ina Garten use it to serve iced seafood. First she spread crushed ice on it and then arranged the seafood. It was gorgeous. Wtith imagination this pan is not only versatile, it's beautiful. I plan to use it a lot.

That's for the pan and how it feels to own a pan like this. Many of the other Mauviel paella pans of this size do not have the 2.5mm gauge copper. For Paella (and for truly benefiting from cooking with copper), that makes a big difference.
