This was my first copper pan. It changed my life. It ruined my bank account.
After doing my due diligence in the forums, I decided to go for the 2.5mm MPro line. I had heard decent reviews on 2mm copper, but learned that anything less is really only appropriate for servingware, not for cooking.
The heat conductivity is so good and even it's creepy. Additionally, the pan reacts almost instantaneously to changes in flame height, giving ridiculous amounts of control. Stainless interior is sturdy and easy to clean. No dents like tinned copper.
Downside? A bit heavy (fine with me). Cast iron handle gets pretty hot. Definitely need a mitt or towel for the handle. Some don't love the discoloration with use. Personally, the patina works for me.
Love it. Converted to copper.
