This unlined copper bowl from France is ideal for whipping egg whites because the copper reacts with the whites, making them more stable. The bowl has a rounded bottom that helps you mix the contents thoroughly plus a bronze handle for gripping or hanging. The chromed-iron stand is handcrafted in France. Beating Bowl, Whisk and Stand are each sold separately. Bowl is 5-qt cap., 9 3/4" diam. Stand is 10 1/4" diam., 5 1/4" high.

Must-have tool for whipping egg whites

After spending several years terrified of anything containing whipped egg whites (which never seemed to turn out for me), I finally made the investment to purchase a Mauviel copper beating bowl. As chefs know, copper ions create a more stable, yellower foam that is harder to overbeat than using glass or stainless steel bowls. Your whipped egg whites are also less likely to denature.
But enough about the food science; this is a gorgeous piece of kitchen equipment that will be a faithful companion for many years. Heavy and durable, this is the only French copper bowl I've found with a soldered handle rather than a ring. This is important as the bowl has a rounded bottom, and won't sit flat unless you purchase the optional stand. To clean, use Mauviel Copperbrill and a soft cloth.
The Mauviel copper beating bowl is WELL worth the investment if you frequently make souffles, mousse, sponge cakes, or any food using a large quantity of egg whites, plus it looks gorgeous in your kitchen.
