Mauviel Copper Beating Bowl

This unlined copper bowl from France is ideal for whipping egg whites because the copper reacts with the whites, making them more stable. The bowl has a rounded bottom that helps you mix the contents thoroughly plus a bronze handle for gripping or hanging. The chromed-iron stand is handcrafted in France. Beating Bowl, Whisk and Stand are each sold separately. Bowl is 5-qt cap., 9 3/4" diam. Stand is 10 1/4" diam., 5 1/4" high.

Must-have tool for whipping egg whites
November 13, 2012
After spending several years terrified of anything containing whipped egg whites (which never seemed to turn out for me), I finally made the investment to purchase a Mauviel copper beating bowl. As chefs know, copper ions create a more stable, yellower foam that is harder to overbeat than using glass or stainless steel bowls. Your whipped egg whites are also less likely to denature.
But enough about the food science; this is a gorgeous piece of kitchen equipment that will be a faithful companion for many years. Heavy and durable, this is the only French copper bowl I've found with a soldered handle rather than a ring. This is important as the bowl has a rounded bottom, and won't sit flat unless you purchase the optional stand. To clean, use Mauviel Copperbrill and a soft cloth.
The Mauviel copper beating bowl is WELL worth the investment if you frequently make souffles, mousse, sponge cakes, or any food using a large quantity of egg whites, plus it looks gorgeous in your kitchen.
Pros: Durable, Quality, Weight

Fantastic product!

There is an easy way to keep the copper clean. I use fine 1T. salt and 2t.vineager slurry, using a gentle circular motion with light pressure. Wash afterward with soap and water, dry thoroughly. I will continue to use mine even though it serves for decoration too.

Excellent Product

Love the bowl and the stand. My only minor complaint is polishing the copper. The stand provides a lot of stability.

Works Wonders!

This is the perfect bowl for whipping up egg whites and whip cream. Everytime I make buttermilk waffles I use my copper bowl. It really doesn't take much more effort to whip eggs whites to soft peaks by hand with this bowl; and, of course, it looks beautiful hanging from my pot rack along with my other copper items.

works is a good thing
I'm glad a little copper goes a long way. I just got my beating bowl a few days ago, sans the stand. So I'm in google mode, and I saw your comment :-)
