Tagine Cooking

I prepare a Moroccan dish, Chicken Tagine with Lemons and Olives, for special guests. I utilize Willians-Somona's product Les Moulins Mahjoub Preserved Lemons rather than prepare them myself because the product enhances the flavor of the dish and it's so easy to use. A recent guest, a Le Cordon Bleu graduate, raved about the dish and as a result his wife brought him a Tagine with all the necessary spices from William's-Somona for Father's Day. I supplied the recipe. I'd say it was a great success for all!

If you go in for intense flavors, these are for you. Tangy, tart, briny, just a bit hot as they are packed with red peppers. Chopped up in a couscous salad, or to accompany grilled meats and poultry, alongside strong, crumbly aged cheeses, anytime you want to add some pickley pop to your plate.

Perfect Accent

These lemons are the perfect accent for many dishes, especially those that require a long, slow simmer. I used these to make the WS Chicken Tagine with Lemon & Olives (which turned out great, even without the tagine spices). Fresh lemons would not have been strong enough to carry the dish. I am looking forward to experimenting with them in a few more recipes, especially those with chicken. It was a great combination.
