Le Creuset Cast-Iron Tarte Tatin Dish

This specially designed pan turns out perfectly cooked apple tarte tatin, the classic French upside-down tart that calls for both stovetop cooking and oven baking. The enameled cast-iron pan offers superior heat retention, so your dessert will emerge golden brown, with a beautifully caramelized finish. Large side handles make it easy to invert the pan for unmolding. Cast iron coated with durable porcelain enamel distributes heat slowly and evenly. Easy-clean nonreactive interior does not require seasoning. Ideal for use in the oven or on any cooktop, including induction. Vibrant, colorful exterior for stove-to-table presentation. 9 3/4" diam., 1 3/4" high. 2-qt. cap. 5 lb. 4 oz. Made in France.

More than dessert

I really enjoy this pan. First of all, it's such a beautiful, cheery color (one of the simple pleasures of LeCreuset). Second, it's versatile. While I have not made a tart tatine (its original purpose), I have used it to make coffeecakes, as well as an impromptu galette. I primarily use it to bake fish filets in a garlic, lemon, olive oil sauce. While shallow, the sides permit the use of sauces, yet help to keep down splatters. It has been super-easy to clean. It is big enough for my purpose (cooking for one or two), but small enough that its weight and storage issues are not a problem. Perfect for the solo cook and so cheerful to look at!
