Kurobuta Pork Shoulder

A rare find at most butcher counters, pork collar is the ultimate pork roast. And this American kurobuta roast from Snake River Farms is a true standout. Kurobuta, or "black hog," is the Japanese term for the Berkshire breed, the source of the prized Japanese kurobuta pork from the Kagoshima Prefecture. Like its famous Japanese counterpart, Snake River kurobuta is deep in color and streaked with fine marbling that makes this pork collar exceptionally sweet, juicy and tender. 2 lb. (serves 6-8). Shipped frozen. Made in USA.

lovely cut for braising
January 24, 2013
I am always on the look out for high-quality meat from small family farms (Having read enough about food safety and animal welfare, I try to avoid factory farmed products). This pork shoulder did not disappoint. I used it for a Bolognese recipe requiring a long braise in milk. Like many Italian recipes, it relies on quality ingredients and a simple approach, which is why I chose this pork shoulder. I served it at a dinner party to raves reviews. Even the kids ate it.
Pros: Texture, Quality, Good for Entertaining

This is the best pork for making pulled pork sandwiches. The flavor was wonderful! My only concern is the cost for such a small roast, but we will order again.
