Ours is produced by Jamison Farm, a small family-owned concern that raises lambs on rolling pastures in the Appalacian foothills. The cuts are slightly smaller than those of grain-fed lamb, with a clean, sweet, succulent flavor that subtly reflects the season's bounty of grasses, herbs, berries and more. Pasture-raised by Jamison Farm, a family-owned farm in Pennsylvania. Animals are allowed to graze on grasses, herbs and berries nine months of the year; hand fed hay and legumes in the winter. This all-natural diet is free of pesticides, insecticides, hormones, antibiotics and GMOs. Top quality, finely-textured lamb with a silky texture and fresh, sweet flavor. Expertly cut and trimmed, the racks arrive with the rib bones frenched for easy preparation and serving. Great for roasting. One rack, with 7-8 chops, approx. 1lb.-1 lb. 8 oz. total (serves 2).
