From Spanish heritage-breed Iberico de bellota hogs, these bone-in costillas (spare ribs) have a juicy, robust flavor that stands alone with no need for BBQ sauce. A diet of bellotas (acorns) creates pork edged and marbled with fat, which melts as it cooks to infuse the meat with nutty sweetness. Full ribs, spanning from leaner back to fat-rich belly, make an impressive presentation and a complex flavor profile. Set of two bone-in racks, each 3 lb., 8 oz. (each serves 2-3). Shipped frozen. This product is misrepresented. First, they are NOT boneless. Second,my package arrived thawed. Third, the "2 racks" turned out to be one untrimmed (membrane still on and edges dried out) rack and some rag tag pieces of dried looking remnants of fat and bone. For $175 bucks, I was expecting trimmed, BONELESS (as described), gourmet cuts. On the positive side, a call to W-S customer service resulted in a refund and an apology. Kudos to WS for their response to my complaint....Boooo Hissss to Fermin Meats.
Pros: excellent w-s customer service response
Cons: Disappointing, Amount, Unhealthy, overpriced
