Fermin Iberico de Bellota Secreto
The secreto is so called because only those who knew enough to ask their butcher for it could get this rare specialty cut. Derived solely from Iberico de bellota hogs, it's similar to a skirt steak - a long, thin cut that cooks quickly on the grill. The rich, meaty flavor is balanced by a nutty sweetness from the signature marbling of this heritage Spanish breed. Set of two steaks, each 8 oz. (each serves 1-2). Shipped frozen. Product of Spain.

I had this cut of Iberico pork (the "secret cut") during a culinary trip to Spain and was thrilled when it became available through WS. The Spaniards prepare it very simply - rub it with olive oil, season with salt and pepper, grill it over the coals of an olivewood fire to medium rare, slice thinly on an angle across the grain, and enjoy! This is a real treat.

Med rare pork?
Eating medium rare pork (<145 degrees) isn't considered safe, even by the new relaxed USDA guidelines for US produced pork. For foreign raised pork, it'd be wise to be even more careful.
