Master pastry chef Jean-Yves Charon is famous for his bake-at-home croissants and other traditional French pastries. For these classic cookies, he makes buttery puff pastry by laboriously folding butter into ultrathin layers of dough, which is then rolled into shape, cut and dusted with sugar. For you, the palmiers are a breeze to prepare. Simply thaw and then bake, filling the house with an irresistible aroma. The cookies have a soft, fluffy interior with a crisp sugary coating and are delicious with a strong cup of coffee, a glass of milk or a delicate dessert wine. 32 pieces (2 lb. 8 oz. total). This is one of my husbands favorite cookies and the best ones are always found at bakery's but I really liked these. Since we try and only have one or two at a time I liked the option of keeping them in the freezer and thawing out a few at a time. They are so fresh this way.

After the first order was sidetracked, and unusable, WS was terrific in sending them out again. Received in perfect/frozen condition, and I was excited to make them. You can only bake 6 at a time, and twice, once in the oven and next in a Breville oven, they burned when using the instructions provided. For the 3rd try, I used the convection oven, set the temp at 350 instead of 375 and watched over them, keeping the cooking time to close to 18-20 minutes, not the 28 recommended. They were perfect. Also, I'm used to the almond palmiers which have more flavor, so these, to me, were rather flat on flavor.

Almost Palmiers

When opened, there were two that were in crumbles, and the rest were broken at random. I managed to get five apart that looked normal and the rest were broken randomly.Followed instructions for baking, but since so many irregular shapes they all baked differently.Some are golden, crispy, and others are light and slightly doughy. Once baked, I took off the pieces to make the palmier whole, and I ended up with 16 whole palmiers.The jumbles will be eaten but can't be used for presentation.I am very disappointed.But, I just spoke with customer service and they are the most wonderful people in the world to rectify the problem. They make sure the customer is satisfied. I highly recommend their values of service. However, I would only recommend these Palmiers if you are not needing them all to look like Palmiers, since they taste good. But, I may have gotten a bad patch, who knows, but their packaging could be adapted slightly with parchment woven between the Palmiers to keep them whole.
