The 85% lean ground meat is a blend of chuck, shoulder and brisket cuts from heritage-breed bison that range freely on open pastures in Ontario, Quebec and Manitoba. A cooperative of 26 ranchers raise the buffalo naturally, without using hormones or antibiotics, and finish the animals on grain for light marbling.
