I have been a fish cutter for the past 35 years and the butcher knife the only knife I will use to clean/fillet my fish(yellow fin tuna). I have not found another knife that would have the same or better results.
Pros: Durable, Easy to Use, Quality, Balance, Easy to Clean, Size, Versatile, Sharpness, Shape, Weight
Cons: Difficult to Store, no safety case
