Our exclusive Ad Hoc seasonings and dressings make it simple for home cooks to make some of Thomas Keller's favorites from his Napa Valley restaurant. The fried chicken recipe calls for brining, then double battering the chicken pieces. The brine, seasoned with fresh herbs and lemon, adds delicate flavor while keeping the meat tender and juicy. For a crispy golden crust, the chicken is twice dredged in a savory coating spiced with garlic, paprika and cayenne pepper before frying. For best flavor, brine for 8-12 hours. Includes two packets of brine seasonings and two packets of coating mix (makes 16-20 pieces); 2 lb. 2 oz. total. Recipe included. A Williams-Sonoma exclusive.

AMAZING!!!
June 17, 2009
I received this as a gift and made it for guests last week. I can say, without exaggeration, that it is the single most complimented dish I have ever made. The chicken was out of this world tender and flavorful. The crispy batter was just perfect. I will be making this again and again. A perfect upgrade to a summertime classic. Yum!!!

A Great Entry Into Frying
June 23, 2009
I've never brined meat before and I've never deep fried anything before. This was very rewarding. The result was delicious. The meat was perfectly done and had great flavor. The coating was very good.

CRISPY!!
July 4, 2009
I just made this for a 4th of July picnic and it turned out perfect. Just the way fried chicken should be. Crispy and flavorful on the outside while juicy and tender on the inside. The brine makes the difference. Can't say enough about this product.

Excellent product
July 7, 2009
I had previously made fried chicken on my own with mixed results. This mix was great although I could have used just a little more of the coating mix. Otherwise, it was fantastic. The directions were easy to follow and result was perfect.

Expensive Flour Mix
July 8, 2009
I've heard about Ad Hoc's amazing fried chicken, read the reviews in Bon Appetit and Food & Wine, and was really excited to try this kit. Buying the kit saved me from buying a lot of ingredients that I didn't already have on hand, and it just seemed like a cute idea. The kit itself is fine, you get enough two make two chickens, however I would add some extra flour to the breading mix in order to make it stretch a little. I have made lots of fried chicken, so I consider myself a fairly efficient breader and this was just not quite enough for a whole chicken. I followed the instructions exactly, and it fried up very nicely. However, we did not like the flavor at all. It wasn't too spicy, it just had a weird flavor and unfortunately we could not eat it. Now I have an extra bag of brine and breading that I don't know what to do with!

Did not like
July 9, 2009
I'm kind of surprised to see so many positive reviews. Like the other reviewer, it fried well although it was a little skimpy on the coating mix.
The brine was overly lemony and the batter just tasted horrible. I've had the real thing and it tastes nothing like this.

Disappointing
July 10, 2009
I love fried chicken and I was looking forward to making this mix, because most things I buy from William's Sonoma are excellent. I thought the brining was good, but the taste of the breading was only fair. While the packaging states 'salt to taste' it doesn't state that the breading is not that salty. I left my chicken unsalted for the first 2 batches and was forced to salt it after it came out of the fryer .
I thought the breading lacked flavor and for this price I was expecting something truly awesome. Disappointing.

Stroke waiting to happen....
July 12, 2009
This mix as tasty as some might think, has over 2,100 mg of salt alone per serving! Good gravy, that's a stroke waiting to happen folks..check the ingredients when you can and eat a healthy version of fried chicken. I marinated the chicken in the rosemary marinade from WS and used the breading dredge from this kit and it was much better with less than half the salt!

Too Salty
July 13, 2009
I was really looking forward to this as it looks so good in the catalogue. My wife is a fried chicken nut but was a little put off with the amount of preparation time this recipe took. When we finally finsihsed it the chicken was too salty and the breading was not too good at all. She wants to regift the remaining. Any takers?

Ad Hoc Fried Chicken Kit
July 15, 2009
Things that appear so simple when you read a recipe can turn out totally the opposite.
I have tried at least 15 different fried chicken recipes..marinated...buttermilked, etc..
Either the chicken turned out too spicy and dry..too crunchy and dry, or not too crunchy and raw in the middle. I decided that you had to be born and brought up in the South to perfect this simple but delectable dish.
I tried the Ad Hoc kit and was astonished. The chicken was so tender and flavorful...the crunch and spices perfect..and the true test - the next day after spending the night in the refridgerator...it was perfect cold for lunch.
The brine is the secret, I think. I have brined my chicken pieces in buttermilk...buttermilk with a bottle of hot sauce...sugar and salt..you name it, I've done it. Consider yourself lucky that you can buy this!

Takes forever and tastes bland
July 15, 2009
Prep time starts the day before, and the results are very disappointing. Bland taste, not a great mouth feel. Definitely not worth the extra 10 bucks (including shipping) per batch this adds to the cost of the meal.

Awesome -- Our hands down favorite
July 16, 2009
Growing up in the South, I've eaten my share of fried chicken -- good and bad. Many Southerners use buttermilk to make their chicken tender, but I never have...until now. The brining of the chicken made it the moistest chicken I've had and the seasoning has just enough spice to make it rock. Some reviewers complained about too much salt but they may not have washed off the chicken after taking it out of the brine and you must. It won't wash out the flavor, but it will prevent the herb pieces and salt from coating the surface of the meat. I found that there was plenty of coating mix but did not add salt to it. Just doubled dipped as directed and into the fryer. Absolutely fabulous. Made this for a large crowd and got great reviews with plenty of "Oh, Wows!" When you can serve up fried chicken on Sunday in the South and hear that, you have a winner. I'll be serving this again.

Great Flavor
July 17, 2009
This I will make again and again! Anytime you Brine poultry it does take advance planning, however this kit is well worth it. The flavors were wonderful, and fried chicken is always a multi step process. The result was well worth it.

Juicy, crispy chicken
July 20, 2009
My husband made this chicken for me this weekend -- fabulous! The people who are commenting on the sodium/serving are perhaps not realizing that the serving info listed on the bag is for the brine...which is, of course, salt! So yes, if you drink the brine, it will be salty. If you brine chicken and then eat the chicken, it will not be salty -- it will be incredible juicy and moist, with a nice crispy crust.

TASTE WAS FLAT
July 20, 2009
Have tried many W&S items and ususally great results(live and die by their biscuit mix). But this was flat and a disapointment. I usally brine my chicken and didn't mind that step but the crust needed some help. Very flat and no flavor. I started frying chicken at the age of 12 and this was by far some of the worst. Not even worth the calories.

Excellent Fried Chicken
July 21, 2009
I was a little leary about using a mix for fried chicken, but this is absolutely delicious, in fact went to the store to try and buy some more mix and they were out. Now I know why, made this for a tail-gate soccer party and everyone loved it, I used both bags (2 chickens) and nothing was left...everyone was commenting on how good it was!
