Emile Henry Artisan Ruffled Pie Dish
The rustic charm of kitchen ceramics in an Emile Henry 1850s catalog provided the inspiration for the French company's Artisan series of bakeware. Each pie dish is shaped from Burgundian clay, which absorbs, distributes and retains heat evenly, so pies bake and brown to perfection. The dish's generous proportions and scalloped rim make it ideal for baking deep-dish fruit and savory pies that will be served at the table. Because its hand-applied glaze won't scratch or craze, you can use sharp utensils for slicing a pie. Microwave, oven, dishwasher, freezer and broiler safe. 1 1/4-qt. cap., 10 1/2" diam. Lovely presentation

Today, I made a quiche in this pie dish. I have never used anything but a quiche dish before. Oh my goodness...what a beautiful and delicious quiche. It rose perfectly and the scalloped crust was just gorgeous. It was almost too beautiful to cut. I like the results much better than my EH quiche dish normally produces. I also used the silicone crust cover which produced excellent results. I only have EH bakeware and thought this change would be fun. It was. Emile Henry bakeware results are always fabulous!!

I was disappointed in the size of the plate. It wouldn't hold a 9" pie. Just be sure you understand the size before you buy. I will be returning mine

PERFECT PIE DISH!

Not only did I buy two of the red ruffled Pie Dishes I also purchased four of the smaller tart sized pie dishes.
These are fantastic. Perfectly baked pies and casseroles!
I use mine mostly for Chicken Pot Pie and they turn out perfect every time. Excellent value and clean up is a breeze.

Help - how to remove slices?

This is such a beautiful dish -- I baked a pecan pie that looked gorgeous. But I couldn't get the pieces out intact! I tried buttering the pie dish first, but still the slices crumbled badly and lost all shape. Can someone advise me? My crust is very "short" which makes a tasty pie. Should I use less shortening and more ice water? I really want to use this for its gorgeous result -- but had to hide the crumbled slices under ice cream.

How to remove slices perfectly
You need to keep trying. It is not the design of the crimped edge causing the problem of your slices not coming out. Your crust may have been to dry.
You might want to make sure the crust runs all the way to the edge of the crimped edge and make sure the crust isn't too thin.
Keep trying. You will get a perfect slice out of this fabulous pie dish! :)
You might want to try cutting the first slice very very thin so you can get the remaining slices out perfectly.

It is not your crust!
I have big troubles cutting a clean slice with this pie dish and I don't think it is the type of pie crust but I think it is the design of the pie dish. I would give another try may be with a different pie recipe and see the result. I think too that the other Emile Henry pie dish has a better design. Happy baking!!

Pecan pie success

I bought this to try my pecan pie in it. It turned out great. It bakes evenly and I returned to get the silicone crust covers since this pie bakes longer than others. I bought the red one and white one after this worked so well.

I'm in love with this pie dish. The quality is amazing and it made my apple pie turn out beautiful! I love the edges of the dish and the neat look it gives your pie crust. I would definitely recommend this to anyone. If this pan could be more amazing... I was very happy when I saw Williams Sonoma sells a pie crust shield that works with this pan. My pie turned out perfect!

More Than Just A Pie Dish

I have two of these in the caramel color and love them. Frankly, it's a disservice to think of them as only a pie dish. I can put mashed potatoes in one, and it elevates its lowly status to something special.
Also nice is the automatic ruffle "crimping" the dish makes in a pie crust. I should warn, the standard pre-made (pre-cut circles) pie crusts sold in the grocery dairy section, are a bit short and thus set down from the dish's top edge. It still works though, so I have no problem with it being short.
Also if you haven't seen the video on how these pie dishes are made, you should watch it. You will be amazed at the dish's innate quality.
As an aside, I have the silicone ruffle crust protectors for these standard-sized pie dishes, and they are a must have for sure. None of my other shields work as well. I hope WS will come out with the same for the small mini ruffle pie dishes.

This dish was so pretty! I got the red and baked a pear-apple pie. I also added the beautiful cutouts. It was wonderful! The pie was so evenly cooked and the crust was perfect! I also recommend the speciality shield for the edges. The pie cut beautifully! I can't wait to use this again!

This fluted pan heats so even and perfect. You can't make a mistake. I got the silicone crust cover and I recommend that as well. If you are like my husband and prefer the filling to the crust then get the regular Emile Henry Pie Dish. This one makes a big fluted crust.

Excellent Dish for Making a Beautiful Pie

When I ordered this pie dish a couple of months ago, it was because the first one that I bought several months before had served so well in producing beautifully scalloped artistic pies and I needed to appear at a function with two pies. I love both these dishes. They make pies look so good even in the hands of a relatively novice pie baker. And the pies come to the table looking very smart in these beautiful dishes. I highly recommend them.

The only pie dish I will ever use!

I have now purchased a total of 4 of these pie dishes - 2 for myself and 2 as gifts. This pie dish not only works exceptionally well - it also looks beautiful and I value the presentation as much as the flavor of what I bake. My pies always cook well in this, it is a little deeper than a standard pie plate so it allows for a little more filling, and the ruffled edge means I don't have to crimp the crust on my own. It cleans really easily and my friends and family all ask me where I got it. I would suggest any serious baker must have one of these in their kitchen.

Just received this gorgeous pie dish for my birthday from my son - apparently he ordered this only yesterday and WS rushed it to arrive before my special day - I must say the WS wrapping and card are really beautiful. Well packaged with quality padding. Very impressed and extremely happy! You can bet he's eating his favorite apple crumb pie baked in it ASAP and getting big hugs & kisses!

Pretty pie, but ...

No argument you'll have a pretty pie in this dish. The crust bakes up nicely and the average pumpkin pie will fit, BUT its next to impossible to get any slice out of this dish in one piece because of the deep fluting. I passed on using it this Thanksgiving.

I'm not sure what type of crust you use in your dish, but I have baked several variations of pastry from scratch in this pan and had no issues removing pretty slices of pie. Perhaps your crust is too crumbly or fragile for manipulation?
If you are really having trouble with sticking etc, then maybe the finish is flawed? If so, I'd just exchange it for a new one.
I've never had a pie fail in this pan so I hope you get it worked out!

Great Pie Plate!

I used the Emile Henry artisan pie plate to make our Thanksgiving pumpkin pie. It was deep enough to hold all of the pumpkin pie filling easily and the bottom of the pie crust was nicely cooked through.
My favorite pumpkin pie recipe is the one on the pumpkin can and I have had trouble in the past with too much filling for the shallower glass pie plates. I have also had trouble with the bottom crust being soggy. Not with this pie plate.
It is beautiful and works perfectly. I couldn't ask for more.
