I, too, didn't want the mess and inconvenience of a "wet" brine, so I picked up a can of the dry. After spreading on the turkey, waiting 24hrs, then rinsing off, my turkey came out fantastic! Very juicy and tender. Can't wait to try it on pork.

Works better than wet brine!

I was disappointed that the regular William Sonoma "wet" brine was sold out the week before Thanksgiving so I bought the dry brine instead. All I can say is WOW! It delivered a flavorful, juicy turkey as well as a crown roast of pork. The spice blend was just right! I will never use anything on my Thanksgiving turkey but W-S dry brine. It's a "holiday in a tin!"

Easiest brine ever

No bucket, no water, no mess! Just spread this brine on your turkey or chicken the night before, wrap the bird up tightly and let this product do its magic. Next day, wash off the brine before cooking the bird, baste with some melted butter and viola! A tasty, juicy, beautifully browned bird as the centerpiece of your meal.

Outstanding with pork chops

This brine is easy to use, has a delicate flavor, and produces exceptionally moist, tender, and delicious pork chops. The seasonings in the brine are well balanced. They enhance the meat without overwhelming it. A single container of this brine is sufficient to prepare many meals using a variety of cooking methods including browning and braising. I can't imagine cooking pork chops now without this brine.

Dry Brine has become a kitchen staple for me.I've used it on chicken, turkey, and pork. Not only does it add flavor, but the meat remains wonderfully moist and tender.

My "GO TO" favorite spice!

I LOVE this dry brine!! Just opening the can and smelling it makes me happy! I've used it on chicken and duck in many different recipes for many years and it always works wonders. It is so easy to use and so aromatic that my guests always rave over the flavor.

This isn't just for turkey

I used this on my Thanksgiving turkey and could not believe the difference in how moist and juicy it was. My husband, who never asks for turkey at Christmas said as we are eating dinner, we have to have turkey at Christmas this year. It was a huge hit with my entire family. I have also used this brine on a pork loin roast and chicken. They were both fantastic. I will always brine from now on.

Love it, but don't understand it

Really don't get the magic that makes this mix work, but it does--my turkey-hating husband (and oh, boy, does he hate turkey, thanks to my MIL's dedication to the thoroughly-cooked fowl) not only ate the dry-brined turkey breast, but offered up an I-was-wrong-you-were-right. How often does that happen? The breast was tasty, salty, and seasoned deep into the meat after only a 24-hour application and a wash. If you haven't yet conquered the good holiday turkey, buy this.

Best brine ever

I have always brined turkeys for the added moisture and flavor, but the brining solutions that required water made the turkey pan heavy to lift, and the whole task took more time and was messy. This past holiday I used this dry brine for the first time, and it gave me the best turkey I've ever roasted. I hope W-S never stops offering this product.

This brine really works! My cousin told me to purchase the turkey paste but since that item is only sold during Thanksgiving I had to find an alternative. I ordered this based on the reviews. My turkey was so juicy and the flavor was amazing. I will be purchasing this every time I cook a turkey!

I bought this around Thanksgiving to use for my Christmas turkey. "Wow" is about all I can say. You only have to brine it for 24 hours, but I had read about dry brines working better over a 3 day period, so that's what I did. It was the best turkey I've ever had. It was unbelievably moist and had the most amazing flavor. I hate that it's a seasonal item. Next year, I'm buying several tins.

I used this rub on my 18 lb. bird this Thanksgiving and I sent a can to my newlywed daughter. Both of us loved the smell when we opened the frig to get the bird out after being dry rubbed the night before. My turkey was done before hers and I told her that her brother said he didn't need gravy since the turkey was so moist. My daughter then texted me an hour later gushing how moist her turkey was. We are two believers in this product you can't go wrong. I am putting this in my hairdresser's xmas gift bag because I love it so much and want to spread the word and who better to tell people than a hairdresser! Today I am using it on a pork roast can't wait to see how it works on it.

Get Your Bibs Out

This product should be sold with bibs as they will make your guests drool. I am not a cook but two years ago I decided to give it a try and used this brine. At first two of my guests showed up and they were lucky to walk out with the left overs. This year the crowd has turned into 15. I used their brine, cranberry relish, pecan and pumpkin bread. They were drooling over the fabulous taste of this turkey and fixins. It was so juicy I did not need to make gravy. I made two turkeys. It has been a week and I am receiving calls ending with "I cannot stop thinking about that turkey". I may have to repeat this performance for Christmas. My suggestion put two can of water in the oven on each side while baking and your turkey will be so juicy it will fall apart. Now thats what I'm talkin about. STOCK UP.

This year marked the 38th consecutive year I've cooked the Thanksgiving meal. Along the way I've had hits and misses with the turkey. I used the Dry Brine this time and the turkey was the best I've ever eaten. I followed the instructions with one exception, I poured melted butter over the bird before I put it in the oven. It was beautiful and delicious.

I made my first turkey for my family this weekend and wanted to try brining it. After reading the reviews, I decided to give the dry brine a try. I'll admit, I was skeptical about how well it would work. I have to say, though, this brine made the best turkey I have ever eaten! It was incredibly moist and tasted fantastic. My family was all picking away at it before it was even done being carved. I had tons of compliments! I highly, highly recommend this product!! It's easy to use and the result is extraordinary!

I used this last Christmas on a Willie Bird turkey. Washed and then dry brined the turkey a day ahead. The next day I washed the brine off as directed then cooked the bird.
I was really hesistant - I thought how could a brine make turkey more moist? The turkey smelled great while it cooked. My son said it was the best turkey he had ever had!
I bought 2 tins this year - one for Christmas and one to try on chickens now that the weather is cooler.
You can't go wrong with this if you follow the directions.

I used this for the first time this past week-end on a whole chicken. Rubbed this brine all over and let it on overnight. Washed it off and cooked it on the grill using the chicken roaster filled with beer. It was tender, juicy and tasty !! My husband isn't a big chicken fan and he loved it.

This brine is so fantastic and easy. Be sure to use it 24 hours in advance for best results. I follow the directions for cooking a turkey (but pour 1/2 stick - whole stick melted butter over the turkey just befre cooking). Then don't open the oven again til it's ready and you have the most incredible, tasty, MOIST turkey! Everyone asks for the recipe. Just be sure to rinse off the brine before cooking. I forgot to do that once and had too-salty gravy. Love this stuff!
