Extremely pricey and a lot of fat
January 21, 2012
Due to the amount of fat around the outside, and large chunks of fat marbled through the steaks making that fat impossible to trim, you end up with no more than approximately 6 oz. of edible meat per steak, before cooking, bringing the price up to around $37 per pound. That makes it double the price of what can be found in stores/butchers, even here in New York City.
Pros: Flavor
Cons: Disappointing, Amount

Product Description
The product description describes these steaks as well marbled. That means fat. fat on the edges, fat within the meat. After reading this, I would not have expected to receive very super lean cuts. For better or for worse, the prime flavor of these steaks is a result of that very marbling.

incorrect review
The basis of a good rib eye is fat marbled through. You should never trim a Rib-eye of it's fat, that is the criteria in which you go by when choosing a good rib-eye. If you like a more "trim" steak, you should choose a different cut, such as a New York or T-bone. Rib Eye is know for fat marbled through. In this case, this sounds like an excellent Rib Eye!!!
