and I almost bought new knives!

I bought my first chef knife 12 years ago. It was expensive and is still in frequent service (used almost every day). I am not easy on any of my knives either, but I do respect them. I never cut on glass cutting boards, I always wash my knives right after I use them and they all have a dedicated place in the gigantic knife block on my counter.
I had been using a steel to hone the blades as needed and when that wasn't good enough, I resorted to a bench sharpener (looks like a brick, has two different grades of sharpening ability). Just recently however, nothing worked...
So, off to WS to find a new solution. The chefs choice 130 sharpener is AMAZING. My 12 year old chef knife came back to life (sharper than I ever remember it being) in under 4 minutes.
I love that knife, and I'm looking forward to many more years of service from it!

I agree!
I agree with this reviewer. I had a very nice 30 year old set of knives that were very hard to use. I could not get them sharp enough, even though I tried sharpening with almost every use. I bought a Chef's Choice sharpener not long ago and used it on these old non-cutting knives. The result was phenomenal! The knives are, as the other reviewer said, sharper even than when bought. Once the knives are sharpened with the three step process, all it takes is the third sharpener to keep the knives honed. This is one of the best kitchen tools I have!
