Blue Hill Grains, Wapsie Valley Corn

Blue Hill's organic Wapsie Valley corn is an heirloom variety, sustainably grown on small farms in upstate New York. These wholesome grains have all the fresh flavor and aroma of just-picked sweet corn. They have all the beauty, too-the colorful kernels range from golden yellow to deep maroon. For the best taste and maximum nutrients, grind the plump kernels just before you use them. We guarantee they'll be some of the best whole grains you've ever tasted. 2 lb. Made in USA. A Williams-Sonoma exclusive.

Wapsie Valley Corn
November 3, 2012
Organic corn for milling is becoming increasingly difficult to find, so when I happened to spot this at Williams Sonoma, I picked up a few bags. I first made a pan of corn muffins, which were outstanding, with full-bodied corn flavor. Next I made corn pancakes and again it was a stand-out batch. This morning I used the corn for a pot of grits and was once again impressed with the full flavor of the corn - smooth, sweet, and delicious. I have been milling my own grain for twenty years and this corn is by far the best I have ever tasted, and it is organic! Highly recommended!

An excellent hard to find product
August 25, 2012
I bought several bags of this at my local Williams-Sonoma and have tested it on my first batch of cornbread. It made VERY flavorful cornbread with a full bodied fresh corn taste. It is very hard to find dried corn for milling and the only other I have found at another website is twice the price and not even organically grown. Thank you Chuck Williams. Also, I would highly recommend you mill this in a Blendtec high speed impact mill as it will be very hard on most mills including the Kitchenaid grain mill attachment.
