Zursun Black Barley

Good for the earth and good for you, this black barley is from heirloom seeds that promote agricultural diversity as well as authentic flavor. With a mahogany color and coffee bean shape, this hearty, nutty grain makes a refreshing substitute for rice in soups, salads and side dishes. Black barley has been prized for generations in Ethiopia as a whole grain that can go from field to table without processing, as the edible bran layer is attached to the kernel. Adds nutty flavor and chewy texture to soups, salads, stuffing and pilaf. Makes an excellent alternative to rice, or combine it with rice and other grains for rich texture and color. Absolutely LOVE this product. After an overnight soak and longish simmer it's ready for anything. Frankly I end up eating some of it for breakfast. But there is nothing better than making a Mediterranean barley salad for lunch...kalamata olives, tomatoes, Parsley, feta, little EVOO and if you wish top it with a little chicken for a truly lovely lunch or light dinner. Gave a bag to a friend who is a manager of a gym...I'm now her favorite friend :) Came back to order two bags!!

I was really disappointed in this product! Apparently there is some secret I dont understand.
I cook barley in soup on a regular basis. I cooked this the same way. After about 2 hours of simmering - almost no kernals opened. The unopened kernals were crunchy.
I left the soup to 'soak' overnight and heated it up again the next day and about 1/3 of the kernals were opened.
Also note - the barely is not from U.S. but from Canada..
Cons: Disappointing, Texture, Time to Prepare, Difficult to Prepare

FABULOUS Healthy Grain!

My sweetheart does not like wild rice, but in an effort to expand our healthy grains repertoire, I decided to try this barley. It's WONDERFUL! I used it in stuffed peppers with Boca 'no meat' crumbles and homemade salsa...super nutty, chewy tasty addition! Tonight it goes in homemade vegetable soup. Really good stuff!! Thanks, WS!
