Baked Brownie Pan
We partnered with legendary New York sweet shop Baked NYC to create a ceramic pan that turns out perfectly tender brownies - the classic American treat for which the bakery is justly famous. The stoneware's dark exterior glaze absorbs heat quickly, and the clay retains its temperature for even baking to a gooey or cakey finish. For serving, the pan goes from oven to table with panache. High-fired stoneware is exceptionally strong and ensures even heating for sweet or savory baking. Safe for oven or microwave use, and fits our Breville countertop convection oven. Glazed with a chocolate exterior and a vibrant orange interior. Angled handles offer a steady grip. Will not absorb odors or flavors. Pair with one of our Baked NYC mixes to create a sweet gift. Baked brownies using my new pan and it worked fabulous. They baked perfectly! Edges were done just right, not too hard. Usually trying to get the first brownie out of the pan, leaves a ball of chocolate crumbs, but the first piece lifted out of the pan with ease. The brownies cooked evenly. Not sure what the previous reviewer was talking about. This pan is better than my old stainless steel. Can't wait to use it again.

Uneven baking

I have tried this pan two times to make my stand-by brownies. I have made this recipe scores of times over the years in many other pans, but this new pan was disappointing. The first time I tried was in the countertop convection oven (Breville, sold at WS). The edges turned out wonderful, but the middle of the brownies was soupy. The second time I tried the pan, I used my wall oven without the convection fan, and this time the bottom of the brownies burned in the same amount of time that the rest was baked. It's well-made, though, and perhaps there's a way to strike a chord between cooking time and methods to get the perfect brownies. The pan was very easy to clean-after the brownies were scraped into the trash, I rinsed and put it in the dishwasher both times.
