A must for sous vide cooking

The Ary unit is a superb product. Very durable/commercial quality. I use this in conjunction with the Polyscience Sous Vide. In my opinion, the Ary Chamber unit is a must for use with sous vide cooking.
I purchased both of the Caso vaccum sealer units that WS offers, and they just did not cut it. As soon as you put an ounce of fluid in the bag, they will not seal properly. The Ary unit can easily seal bags that are filled with as much as 2 cups of liquid, making it the perfect tool for sous vide cooking as well as for marinating.
Since purchasing this product, one of my favorite recipes to make is miso black cod/sea bass. I allow the fish to marinade in the miso overnight in the vacuum sealed bag, then place it directly into the water bath the next day..pure perfection!
A few cons: must have a dedicated space to keep this in. It is a very large and heavy piece. I keep mine in the basement, next to my Polyscience Sous Vide on a workbench.

Accomplishes the same results as professional/ commercial units that cost 4x the price. It would be a nice improvement to be able to set the vacuum to a specific level rather than just on time. The cycle rate is somewhat slow but acceptable.
At the price point the unit offers good value and works as advertised. It is a great addition to a home kitchen and could be used in light duty commercial applications.
It is a must have for sous vide applications/ polyscience circulator.

Lately I have become an obsessive Sous-Vide freak in the kitchen, but the cheap vacuum sealer was not cutting it for me, failing on the seals, sucking juices into the intake valve, etc.
We invested in this chamber sealer and have not been disappointed! We buy our meats in bulk now, marinade or season them and then seal them... into the freezer they go, all ready for transfer into the Sous-vide. Its amazing! The other night we cooked short ribs in the Sous-vide after sealing them with spices and waited 72 hours. After cooking, we took the leftover red wine reduction that we spent hours perfecting and sealed a couple bags for later use! Try doing that with a traditional cheap vacuum sealer! I cannot stress how much difference a chamber sealer makes! Its heavy, made of commercial quality motors that are in machines 3-4 times the price!
