All-Clad Tri-Ply Stainless-Steel 6-Qt. Braiser with Rack

Designed for braising - a classic French technique that calls for browning meat on the stovetop followed by baking in the moist heat of the oven - this pan has high sides and a generous capacity that make it ideal for dishes like osso bucco and chicken cacciatore. Three-ply construction sandwiches a heat-responsive aluminum core between an easy-clean stainless-steel interior and exterior; interior won't react with foods. Ensures fast, even heating. Domed lid promotes heat circulation and locks in moisture. Riveted stainless-steel handles stay cool on the cooktop. Includes a removable stainless-steel rack that elevates meats above their drippings. Ideal for use on any cooktop, including induction. Polished finish for oven-to-table presentation. Handcrafted in USA.

Large and surprisingly lightweight
November 10, 2014
This is a big braiser, almost 13" in diameter, and it includes a heavy duty meat rack and a nice high domed lid. It is also surprisingly lightweight for all clad, which makes it very maneuverable. At the same time, it sadly doesn't seem to heat very evenly. My largest electric radiant burner is 10", so perhaps that's at least part of the problem. I've even wondered if this braiser really was tri-ply. Meanwhile, my old and VERY heavy 12" Piazza sauteuse doesn't have the same problem with uneven heating or hot spots on the same 10" burner. I prefer the lighter weight of the all clad braiser for its maneuverability but I wish it performed more like my too-heavy Piazza sauteuse. Even so, I find myself reaching for the all clad braiser because it is so easy to handle in comparison to my Piazza sauteuse.
Pros: Easy to Use, Size, high-domed lid, high quality meat rack
Cons: doesn't heat very evenly
