Perfectly Versatile

This pan is the ideal tool for making cream sauces and delicate emulsions. It is also perfect for delicately reheating various food items where scorching or burning is a concern. I use mine quite often with great results. I also use a silicone wire whip for emulsions so the porcelin does not get scratched.

Incredibly perfect double boiler

Have used this for melting chocolate multiple times and making bernaise twice...things turn out well BECAUSE of this pan. LOVE it and wish I had had it years ago.

Awesome quality

For anyone who loves the artistry of cooking, the quality of All-Clad d5 products has no match. The All-Clad d5 products allow cooking at lower temperatures which give you more control and time to fine tune the chemistry of cooking. This double boiler is just what I needed. There is no chance of burning. The ceramic insert yields a constant temperature. I highly recommend this and other d5 products to the serious chief. The only drawback I found was the lid on the double boiler made in China was of slightly less quality and the fit was loose compared to the lid that fits the accompanying 2 quart sauce pot made in the USA.

lids?
Mine arrived with 2 lids. One is the standard lid that is on my other All-Clad saucepans. But there is an additional lid, with a less significant handle--and it is a tad smaller. I am guessing the regular lid is for the 2 qt. saucepan and perhaps the smaller lid is to cover the double boiler. Has anyone else noticed that?

Great pot for making soups and chowders

A double boiler is a necessity for making milk and cream-based soups and chowders when you don't want to scorch mixture. The ceramic double boiler is easy to use and clean. The accompanying 2 quart sauce pan works well with the double boiler or by itself.

Many Uses- Fondue Too

Love it. I use this kettle all the time as it seems to be the perfect size for so many applications- veggies, sauces. It is particularly nice for candy making/ syrups. Quality is excellent. No issues with food sticking to the bottom of the pan. Cleans up well. The double boiler is fabulous. An added bonus is that it works well as a fondue pot for fragile fondue recipe's such as cheese or chocolate fondues. I put the kettle with the hot water under it on a trivet and the cheese or chocolate fondue stays fluid for a good 45 to 60 mintues without overcooking as can sometimes happen in fondue pots.

This is actually a D5 2 qt saucepan with a double boiler insert. The 2 qt size is a workhorse, and the insert is great for delicate sauces or melting chocolate for candy or cookies. Very nice to have.
