About me: I was in the Chinese restaurant business for about 10 years.
Heat conductivity: 5 stars – Heats up quickly, evenly and stays hot. The best I have even come across for this aspect.
Weight: It is heavy but acceptable. Please consider I am 5’8, 185, and works out about 5 times a week. My wife is not able to pick this wok up by the handle with one hand. The handle close to the wok also get hot, so you can’t hold the handle too closely.
Easy to clean: Not really. I have to soak it in “Bar Keeper’s Friend” for a couple hours every few times I use it. If you feel like you have stained the wok, you will need to let it soak overnight. I understand this might be the same with other Stainless-Steel woks.
Size: This is the real issue. If you use this wok for stir frying purposes, the wok is too wide (14”) and too shallow (3”) to flip the food.
The combination of size and weight make flipping the food while cooking very difficult. Hence, 4 stars.
