Before purchasing I read all the reviews here and on other sites. It was clear to me that those who use patty papers love this press, and those who don't have a number of complaints. So I use patty papers, and I love it, too! My first step was to determine the proper setting for the burger size we prefer. I mixed our favorite seasonings and special ingreditents into the meat and weighed out 1/2-lb. portions. Then I pressed and adjusted with the first one until the burger was perfectly formed. I've never changed the setting since then! I typically do 6 lbs. of meat at a time and freeze the extras, then thaw before grilling. Bonus.. using patty papers also means that no meat ever touches the press, so there's nothing to clean up. With proper use, this thing should last forever!

I actually ordered this in error. I wanted the Stuffed press and kept this item rather than go thru the entire return process. It works well but a patty formed by hand work just as well for me and as a cook I personally like forming my patties.

I made 60 patties for an upcoming family reunion.
Works great! I inserted sheets of dry waxed paper and the entire process of mess-free.
If you need a time saving appliance, this one is it.
Highly recommend it.

This is a MUST HAVE if you love to grill burgers as much as me!! It's very easy to use, and very easy to clean!! If you cut waxed paper squares, place one on the bottom, then the meat, then top with another waxed paper square, you'll have professional looking uniform burgers. The waxed paper also wraps around the patty for easy freezing!!

Sticking patty

How do I get the burger out of the top after I have formed it. It sticks to the top of the press and since it forms somewhat of a dome, you have to dig it out.

This is a great product. Creates a uniform height across the whole patty which helps it cook perfectly. I love the adjustable thickness setting. Very satisifed.

Difficult to clean- must be completely taken apart, hand washed, then reassembled. Ground meat in burgers was not tightly compressed, even though I pressed down firmly on top cover. Air pockets in burger. Much better to form and press out burgers by hand. Will not use this press again.
Cons: Difficult to Clean, meat not tightly compressed.

Plastic Press??
To the reviewer who mentioned W-S selling a plastic, dishwasher safe press. Do they still offer it? I couldn't find anything like it online.

too much trouble
Life's too short to hand wash burger presses, especially since W-S sells a plastic one (that I love) and you can throw it in the dishwasher when you finish, but I have problems with her idea of a tight -dense burger. Most burgers are overworked when hand formed, tending to make them dry and rubbery.

Best Burger Maker minus the Bun since Sliced Bread

This is one of those gadgets that you wonder what you did before you had it. Well, except for we KNOW what we did before we had it. We either bought overpriced pre-made burger patties or frozen commodity level patties, or we made them by hand. Making them by hand we used a plastic Tupperware press that made more mess than burger.
With the papers, this is easy to use, easy to clean, and just all around good to have for us meat-eaters.
A couple of caveats:
1) Make sure you order and use the papers, one on top and one on bottom. Without them, the excess meat will go up inside the press, and be wasted. Also it makes clean-up a breeze. plus, they allow you to easily stack and transport them to the grill.
2) There are two holes at the back of the plate. These are for screws. Find or buy a wooden cutting board and screw this down. It will make a world of difference in how easy this is to use.

the quality is not what i would ever expect from Williams-Sonoma. have not even use it and already the knob on top the threads are stripped - absolutely would not recommend for my friends or anyone else...

Uneven, hard to clean

I only used it once and I am not happy with it at all. The wing nut on the top that locked it in place never tightened because it kept slipping threads. There is no really clear marking of the burger thickness. If you don't have a piece of burger paper on the top you end up losing 1/4 of the meat between the press and the sides. Burger was uneven and the press has to be completely disassembled to clean all the extra meat out.

I have owned this for several years and it makes perfect patties every time. The ability to set the burger thickness is a big advantage too. To facilitate cleanup and patty storage, I always use a 'patty paper' on the bottom and atop the burger. This ensures that the patty will release easily and no meat will get into the press. I simply wipe it clean and store it away until the next time.

Burger press for big grill parties

I bought this press on a Thursday and used it to make 256 home made burgers from a mix of fresh ground 80/20 chuck and brisket on the following Saturday for a school cookout. The press worked flawlessly and the local outdoor kitchen business owner was so impressed I believe he left to go buy one. The burgers were a hit and definitely impressed over the boxed frozen ones from large wholesale clubs. I used 1 burger paper on the top and bottom to simplify burger removal and storage prior to cooking. I would buy this again in a minute.

This press works great! My wife gave it to me for Father's Day (I have been hand pressing my burgers for 5 years and commented that I needed a press when ever we had burgers.). Every time I have used it for company they rave about the burgers, how thick and even they look and cooked. The only thing I don't like is that after every use/cleaning some sort of residue shows up on the dial marks. I have never submerged the press only wiped it off with warm soapy water and then with a clean damp cloth. Other than that this thing works like a champ.
