A great kit--- give yourself a treat and save $

I love those folks from Brooklyn at Acme. I drive hours out of my way to hit their Friday morning outlet store near the warehouse by the Hudson in Greenpoint (Brooklyn). (I live in Maryland.) Their hot smoked salmon is just literally the world's greatest food -- period. So, when I found out their had a homemade Gravalx starter, I had to be one of the first to get it. Just made my first batch -- used about half the container on a two pound fillet skin on. Wow, really professional quality results!! A wonderful flavor in just two days. Not too salty, a pleasant dill flavor that goes great on crackers. The salmon was easy to slice, pleasant translucent color throughout, like cold smoked salmon looks. The kit gives you the flexibility to add volka or whatever else you like. But it's a real deal for the price -- I'm thinking you'd get about 4 lbs of Gravalax (it tastes like a dilly Nova, honestly) from one kit. Wonderful product. Acme knows smoked fish!!
